Shredded Cheese: I prefer using store-bought Mexican Style 4 Cheese Blend because I love the texture of the shredded cheese and the flavor combination of Monterey Jack, Cheddar, Asadero and Queso Quesadilla cheese. But mix things up by using a blend of cheeses including pepper jack or Sharp Cheddar cheese. Use whatever type of cheese you have on hand.
