    Spring Roll in a Bowl

    Spring Roll in a Bowl is a quick and easy one-pan meal that’s ready in under 30 minutes. Packed with crunchy cabbage, tender ground turkey and a savory homemade sauce, it delivers all the flavors of your favorite egg rolls, without the deep-frying. This easy recipe uses coleslaw mix for convenience and is perfect for busy weeknights.

    ⭐ Why Melinda Loves Spring Roll in a Bowl

    This has all the flavors of classic egg rolls, but there's no wrapping, rolling or deep frying.

    Similar to my recipe for Spicy Peanut Noodles, it's faster than takeout! But there's no waiting in a drive-thru or delivery involved.

    This is a great meal for a busy weeknight.

    🥗 Ingredients to Have on Hand

    Green Onions: These are added as a garnish, but they boost the freshness in each bite and also add a nice pop of color to each serving. Keep the green onions on hand and make a batch of my Sweet Corn Pasta Salad.

    Sesame Oil and Fish Sauce: Both of these ingredients are flavor boosters! The fish sauce is optional, and it adds a wonderful salty flavor that can't be beat. I keep fish sauce on hand just for this recipe. Sesame oil adds a nutty flavor. I recommend using toasted sesame oil, but either variety (toasted or not toasted) works well.

    Bean Sprouts: These add a crisp and slightly sweet flavor to your spring roll in a bowl. I prefer to buy them canned so I can keep the ingredients on hand in the pantry, but you could also use fresh bean sprouts.

    Egg: The egg adds great flavor to this recipe and ties all the ingredients together! While I was recipe testing Spring Roll in a Bowl, I made it several times without the egg, and what a difference the egg makes! Keep the eggs on hand for recipes like Crusted Chicken Romano, Buttermilk Chicken Tenders or fo course for Sausage Egg and Cheese breakfast casserole.

    Ground Turkey: You could swap this for ground chicken if you'd prefer. I like to use ground turkey with 7 percent fat, although the fat is drained, the meat is less dry than that with a lower fat content.

    Coleslaw: Look for these packages in the produce section of the grocery store. As an option, you could also finely chop about 4 ½ cups of cabbage and grate fresh carrots, but I love the shortcut of buying the vegetables all ready to go!

    📋 Step-by-Step Instructions

    Spring Roll in a Bowl is a super-fast meal to prepare! It cooks in about 15 minutes.

    ⭐Pro Tip

    I like to set out and prepare the garnish ingredients: chopped green onions, sesame seeds and wonton strips - before I start cooking. That way, there's no delay in getting dinner on the table.

    Step 1: In a small bowl or measuring cup, add the soy sauce, vegetable broth, sesame oil, fish sauce and cornstarch and whisk to combine. Prepping the sauce first will help you once the meat is cooked and the other ingredients are added to the pan. Set the cup or bowl aside.

    Step 2: In a large skillet or wok, brown the ground turkey, then drain it. Return the meat to the pan and add the garlic and ginger. Stir. Push the ingredients to the side of the pan to make a space for the egg to cook. Crack the egg into the pan and "scramble" it until cooked.

    Step 3: Stir the cooked egg into the cooked ground turkey, garlic and ginger.

    Step 4: Add the bag of coleslaw mix and bean sprouts and stir to combine the ingredients. Pour the sauce on top and continue stirring over medium heat until all of the ingredients are warmed up and the cabbage has softened.

    Step 5: Spoon into four serving bowls and top each with diced green onions, sesame seeds and wonton strips. Serve and enjoy!

    ⭐Pro Tip

    You can use either a large skillet or a wok to cook Spring Roll in a Bowl. There's no need to cover the ingredients while they cook, but you'll want to use a pan large enough to accommodate all the ingredients as you stir them without spilling over.

    💭 Recipe FAQs

    Why add cornstarch to the sauce?

    I've made it with and without the cornstarch, but including it creates a slightly thicker sauce that clings better to the spring roll ingredients.

    Is this freezer-friendly?

    I don't recommend freezing it. Spring Roll in a Bowl is best served on the day it's made or stored covered in an airtight container in the fridge for 3-4 days.

    How can I reheat leftovers?

    Reheat in the microwave or use a skillet on medium-low heat to gently warm up leftovers.

    🥘 What to Serve with Spring Roll in a Bowl

    Rice: Plain white rice is a delicious side to serve with this entree! Have plenty of extra soy sauce on hand.

    BBQ Pork and Seeds: These are the perfect way to boost the protein factor of your menu, plus the flavor combination with the spring roll in a bowl ingredients might remind you of your favorite takeout meal.

    Oven-Baked Orange Tofu: The tangy, citrus flavor of the orange sauce and the added protein with the tofu is another great way to add a variety of flavors to the meal, especially if you are feeding more than four and need a larger menu.

    🥣 Leftovers and Storage

    This recipe serves four, and it goes fast! But if you do have leftovers, store them covered in the refrigerator and plan to reheat and enjoy them within 4 days.

    ⭐Pro Tip

    If reheating leftovers, for extra crunch and color, add a tablespoon or two of shredded red cabbage or matchstick carrots just before serving. It adds a little flair and keeps those textures vibrant, even after a night in the fridge.

    Spring Roll in a Bowl is everything you love about takeout spring rolls, with no wrappers or rolling required. Made with ground turkey, garlic, crunchy cabbage and a savory homemade sauce, it’s a quick one-pan dinner that’s ready in under 30 minutes.

    Ingredients 

    • 2 teaspoons olive oil
    • 1 lb ground turkey
    • 2 cloves garlic - crushed, about 1 teaspoon or to taste
    • 1 teaspoon fresh ginger - grated
    • 1 egg
    • 1 14-ounce bag coleslaw mix - or 4 ½ cups finely shredded cabbage and carrots
    • 1 14-ounce can bean sprouts - drained

    Sauce Ingredients

    • ¼ cup soy sauce - low sodium
    • ¼ cup broth - vegetable, chicken or plain water
    • 2 teaspoons sesame oil
    • 2 teaspoons fish sauce - optional, but boosts the flavor
    • 1 tablespoon cornstarch

    Optional Garnishes

    • ½ cup green onions - diced, for garnish
    • ¼ cup sesame seeds - optional garnish
    • 2 cups wonton strips - optional garnish

    Instructions

    Make the Sauce Ingredients

    • In a small bowl or measuring cup, add the soy sauce, vegetable broth, sesame oil, fish sauce and cornstarch and whisk to combine. Set aside.
      ¼ cup soy sauce, ¼ cup broth, 2 teaspoons sesame oil, 2 teaspoons fish sauce, 1 tablespoon cornstarch

    Cook Ground Meat

    • Heat the oil in a large skillet or wok over medium-high heat. Once the oil starts to shimmer, add the ground turkey and use a spoon to break it apart while it cooks. Continue cooking until it’s no longer pink, about 4-5 minutes.
      2 teaspoons olive oil, 1 lb ground turkey
    • Turn off the heat and drain the fat from cooked meat by placing the cooked meat on a plate lined with paper towels. Return the meat to the pan.
      Turn the heat to medium and add the garlic and grated ginger.
      Stir to combine. Push the ingredients to one side of the pan. Crack the egg into the pan and cook it gently, breaking it apart as it cooks.

      2 cloves garlic, 1 teaspoon fresh ginger, 1 egg

    Add Cabbage and Sauce

    • Add the cole slaw mix and drained bean sprouts to the cooked meat in the skillet and stir.
      Over medium heat, cook and stir until the cabbage is tender but still crisp, about 3-5 minutes.
      Pour the sauce ingredients over the top and stir again. Cook for another minute or two or until all the ingredients are heated and spoon into serving bowls.

    Garnish and Serve

    • Top each serving with several tablespoons of fried wonton strips, a tablespoon of diced green onions and a teaspoon of sesame seeds.
