Instructions
Preheat oven to 350°F and spray a loaf pan or two-quart baking dish with Pam or grease with shortening.
Combine Meatloaf Ingredients
In a large bowl, add the eggs, milk and bread cubes. Let the ingredients sit for a few minutes or until the bread absorbs some of the liquid. Stir in the onion flakes, grated carrot, dried parsley, salt, dried basil and pepper. Stir to combine. Add the ground meat and mix just until blended. Overmixing the meat can lead to a dense, dry meatloaf.
Place the meat mixture in the baking dish and place in the preheated oven. Bake, uncovered for 45 minutes.
While the meatloaf bakes, prepare the mustard glaze topping.
Make the Mustard Glaze
In a small bowl combine the mustard, brown sugar, onion flakes, garlic powder and pepper. Stir to combine then set aside until the 45 minutes of baking wraps up.
Remove the meatloaf from the oven and spread the mustard glaze across the top.
Return the meatloaf to the oven and bake for an additional 20-30 minutes or until a meat thermometer reads 160°F in the center of the meatloaf.
Serve
Remove the meatloaf and lightly place a sheet of foil on top. Let the meatloaf sit for 10 minutes. Cut the meatloaf into large slices and serve.
Notes
Use a combination of meat that your family will enjoy the most. You'll need two pounds of ground meat for No Ketchup Meatloaf, but the proportions and ratios of the meats can be adjusted according to your preferences.Experiment with your favorite style of mustard to make the glaze. If your family enjoys extra spicy mustard on sandwiches, then use that style of mustard for the glaze. Additional Optional Ingredients: Add a tablespoon of Worcestershire sauce, or equal parts soy sauce and apple cider vinegar or balsamic vinegar to the meatloaf. Serve meatloaf with Mexican Fried Rice and Homemade Creamed Corn for a tasty and unique flavor combination.
