Instructions
Skillet Glazing
Place olive oil in a cast iron skillet over medium/high heat on the stove. Once the oil starts shimmering, add salmon fillets skin-side down. Add a few dashes of soy sauce (about one teaspoon) and a squeeze of honey (about one teaspoon) on top of each fillet and sprinkle with a little salt and pepper. Reduce heat to medium, cover the skillet and cook for 4 minutes. Remove the lid and carefully flip over each fillet, cook for another minute or two uncovered. Cook until the salmon flesh flakes easily and separates, if you use a food thermometer, check the thickest part of the fillet, the salmon should reach 145°F. This is the point where the fillet will get seared and the honey and soy sauce will create a glaze. Don't worry if the salmon skin is blackened and crispy when you flip it over. The glaze on the fillet will be perfect once you remove it from the pan. Remove the fillets from the skillet and serve right away.
Oven Baked Option
Place the salmon fillets skin side down on a non-stick baking sheet, or one lined with parchment paper. Add a few dashes of soy sauce (about one teaspoon) and a squeeze of honey (about one teaspoon) on top of each fillet and sprinkle with a little salt and pepper. Bake in a 450° F oven for 10 - 15 minutes. The glaze on the salmon isn't quite as thick using this technique, but it is still delicious.
Notes
Any variety of salmon will work great with this recipe, just be sure to buy fresh fillets. Look for salmon that appears moist, not dried out or rubbery.
