A classic potato casserole side dish made with diced hash brown potatoes in a cheesy, creamy sauce. It's a family-friendly potato side dish topped with a crunchy, buttery cornflake topping and is incredibly easy to make. 1, 2lbbag frozen hash brown potatoes diced hash browns
½ cupdried onion flakes
1cupsour cream
1can Cream of Chicken Soupundiluted, don't add water
1 ½cupscorn flakes use either corn flakes cereal or pre-crushed corn flake crumbs
Instructions
Combine Ingredients
Preheat oven to 350°F and spray a 9” x 13” pan with Pam, or grease with shortening.
Grate the cheddar cheese and set aside.
Melt the salted butter in a glass measuring cup and pour out ¼ cup into a small mixing bowl. We’ll use that ¼ cup of butter to make the topping in a few minutes.
In a large bowl, place all of the contents from the 2-pound bag of frozen diced potatoes, add the grated cheddar cheese, sour cream, dried onions, the entire can of cream of chicken soup and ½ cup melted butter. Stir to combine.
Spoon the potato mixture into the prepared baking dish and set aside.
Place 1 ½ cups of corn flakes into a zipped-top plastic bag. Seal the top. Use a rolling pin to crush the cereal into coarse flakes or instead, if you are using store-bought Corn Flake Crumbs (found in the baking aisle of the grocery store), measure the same amount of crumbs. In the small mixing bowl with the reserved ¼ cup of butter, add the corn flake crumbs and stir to create the topping. The mixture will be buttery and thick.
Sprinkle the crumb topping on the top of the potatoes in the baking dish.
Bake and Serve
Bake for one hour, uncovered until the top is lightly browned and the potatoes are bubbling around the edges.
Notes
You can make corn flake crumbs using boxed Corn Flakes, the breakfast cereal, instead of buying Corn Flake Crumbs. Measure 1 ½ cups of the cereal into a zipped-top plastic bag and use a rolling pin or bottle to crush the flakes. Blend with butter and top the potatoes as directed in the recipe. The topping is especially crunchy this way! Delicious. Serve this with Homemade Creamed Corn for a classic, comfort food meal. Or with Pork Chops and Sauerkraut for a fabulous dinner.
