Fresh Apple Cake is very easy to make, no need to peel the apples and the aroma while it's baking is absolutely divine. It's delicious warm from the oven, but I keep leftovers in the fridge and it's just as good served cold.
3-4apples, sliced and diced with the peels onUse a baking variety of apples such as Golden Delicious, Honeycrisp or Granny Smith. You'll need about 4 cups of sliced apples.

½cupsugar
½cupbrown sugar
½teaspoonsalt
½teaspoonbaking powder
½teaspoonbaking soda
½teaspooncinnamon
½teaspoonnutmeg
4tablespoonsbuttermelted
1egg
1teaspoonvanilla
Instructions
Preheat oven to 350° F
Grease or spray a 9" pie plate with Pam, set aside.
Assemble Apple Cake Ingredients
Slice apples into bite-sized pieces and set aside. Leave the peels on.
Blend both sugars and all the dry ingredients together in a medium bowl. Stir to combine.Add the diced apples to the bowl and stir to coat the apples with the sugar mixture.In a glass measuring cup or small bowl, melt the butter and add vanilla extract and egg, stir to combine. Blend the wet ingredients - melted butter, egg and vanilla extract - with the diced apples and sugar mixture. Stir together until there's no sign of dry ingredients at the bottom of the bowl. The dough will be stiff.
Bake and Serve
Spread the apple cake mixture into the prepared pie plate and bake 40-45 minutes until the cake is golden brown.Serve with vanilla ice cream or fresh whipped cream.
Notes
Homemade, Fresh Apple Cake bakes beautifully in any shape baking dish as long as it's large enough to hold a volume of about 5 cups and is small enough for the batter to spread to about 2 inches in height across the dish. Other baking options using fresh fruit for dessert include Fresh Fruit Tart, Chocolate Strawberry Pie and Croissant Bread Pudding. All delicious and all tried and true!
