All the flavor of our favorite bagel topping blended with a low-carb, creamy hummus. Oven-roasted cauliflower replaces chick peas to create an appetizer or dip that's the perfect pairing for a tray of fresh veggies and warm pita bread or chips.
2headscauliflowermedium sized heads, you'll want about 4 pounds of cauliflower total
2tablespoonsolive oilplus one additional teaspoon of olive oil for garnish
2clovesgarliccrushed, about 2 teaspoons of garlic
4tablespoonstahini
2tablespoonslemon juicefresh squeezed, optional
½teaspoon salt and pepperto taste, I use ½ teaspoon of each
3tablespoonsEverything Bagel Seasoning
1teaspoon wateronly if needed to help develop the consistency of the hummus
Instructions
Prep and Bake Cauliflower
Preheat oven to 400° F and line a baking sheet with parchment paper. Spray lightly with Pam.
Rinse cauliflower and cut the large stem and core from the center of each head. Break the head apart or use a sharp knife to slice into florets. Spread cauliflower on the parchment paper. Place 2 tablespoons olive oil in a small bowl and use a pastry brush to lightly coat the florets with oil. Bake for 40-45 minutes, or until the cauliflower softens and starts to brown on the edges.
Blend Ingredients
Place oven-roasted cauliflower garlic, tahini, lemon juice (if using), salt and pepper in a food processor. Blend until smooth and creamy - the consistency of traditional hummus, you may need to add a teaspoon of water, and blend again. Add the Everything Bagel seasoning and pulse again for a few seconds to blend the seasoning. Add more water if necessary to create the proper consistentcy.
Serve and Enjoy
Scoop the cauliflower hummus on a serving plate, a shallow bowl or pie plate. Use an additional 1 teaspoon of olive oil to swirl on top of the hummus and if you'd like, sprinkle a little additional Everything Bagel seasoning on top. Serve with sliced cucumbers, pita chips, pita bread or a crusty baguette, sliced thin.
Serve warm or place in a covered container and refrigerate until you are ready to serve. This recipe makes approximately three cups of hummus.
