French Tacos are a hearty and very filling fast-food dish and their popularity has taken off in recent years. They are a favorite across France and beyond. Serve with French Fry sauce or my Pickle de Gallo recipe for a delicious flavor combination!
2cupsFrench Fries, or about half of a 32-ounce package, baked according to the package instructions
1sweet onion, diced about 1-2 cups diced onion
1tablespoonolive oil
1poundground beef
1teaspoongarlic saltor to taste
1teaspoonpepperor to taste
Cheese Sauce Ingredients
½cupGruyère cheesegrated, or use cheddar cheese
1 teaspoonfresh dillchopped fine, save the rest for garnish
2tablespoonsbutter
2tablespoonsflour
1cupmilk
1 teaspoonsalt
Condiment
4tablespoonsFrench Fry Sauce (link above in the recipe summary)or your favorite condiments such as mayonnaise, ketchup or relish

4sprigsfresh dill, divided. Use 1 teaspoon for the cheese sauce
2 tomatoes, sliced
Instructions
Set aside the flour tortillas.
Prepare the Filling Ingredients
Preheat the oven to 450°F (this may vary, follow the package instructions) and arrange the frozen French fries on a baking sheet. I like to line the sheet with parchment paper. You’ll bake the fries in the oven while prepping the filling ingredients. Follow the baking directions on the bag, it will likely take the fries 20-25 minutes to bake.
Grate the cheese and chop the fresh dill. Set aside.
While the fries are in the oven, in a 3-quart saucepan (medium size pan) heat the olive oil over medium-high heat until it starts to shimmer. Add the diced onion and cook for about 10 minutes, or until the onions are softened and caramelized. Remove the onions from the pan.
To the same pan, add the pound of ground beef. Season it with garlic salt and pepper until the meat is fully cooked. Remove the beef from the pan and scoop it onto a plate covered in paper towels to drain. Set aside.
Place the same pan back on the stove. Use additional paper towels to carefully wipe out the interior of the pan and remove any small pieces of ground beef. Turn the heat to medium. Add the butter and once it melts whisk in the flour. Continue whisking for about a minute. Add the milk and continue stirring until it thickens. Remove from the heat and add the grated cheese, salt and chopped fresh dill. Whisk until blended. Set aside.
Heat a skillet or griddle to medium-high heat. Remove the French fries from the oven.
Assemble the French Tacos
Place a flour tortilla on a cutting board or large plate. Spread a scoop of cheese sauce in the middle then top with about ½ cup of the ground beef, ¼ cup of the onions and 5 or 6 French fries. Top with about a tablespoon of French fry sauce or your favorite condiment. As an option, add another spoonful of the cheese sauce on top.
Fold the sides of the tortilla together then fold the top and bottom over the top to form a square.
Place the French Taco on the hot griddle or skillet and heat until the tortilla is golden brown on both sides, use a spatula to turn the taco. Continue heating it until the filling ingredients are hot, about 4 minutes per side. Adjust the heat as needed so the tortilla doesn’t get too brown.
Place the taco on a cutting board and slice it in half. Serve with sliced, fresh tomatoes and sprigs of fresh dill. Bon appetite!
Notes
You can use any variety of cheese in the cheese sauce. Sharp or mild cheddar are delicious options. Or take the really easy road and buy a jar of queso at the grocery store. You could even just use grated cheese.
