Ready to eat in about 30 minutes. Easy Creamy Chicken Stroganoff is classic comfort food that combines simple ingredients from the pantry and fridge to create a silky simmering sauce that's full of flavor.
2poundschicken tendersor chicken breasts sliced into 1" strips
1envelopeonion soup mix
8ouncesfresh mushrooms
1cancream of mushroom soupundiluted
½teaspoonpepper
¼teaspoonsaltto taste
2cupssour cream
Instructions
Simmer in a Skillet
Heat olive oil in a large skillet on the stove until the oil starts to shimmer.
Add chicken tenders to the skillet and simmer in the hot olive oil until the chicken is partially cooked.
Sprinkle one envelope of onion soup mix on the chicken, add mushrooms and simmer for 10 minutes, or until the chicken is fully cooked and is easy to break apart into bite-sized portions.
Add the can of cream of mushroom soup and stir until combined. Cover and reduce heat to low. Continue cooking for 10 more minutes.
Remove lid and stir in the sour cream.
Cook for a few more minutes or until the sour cream is piping hot, but not boiling.
Serve
Serve by spooning over cooked pasta, mashed potatoes, rice, toast or oven roasted veggies.
Notes
Cream of chicken soup is a delicious substitute for cream of mushroom soup. I've used both and they are equally tasty in this recipe. As an option to the noodles, serve this with Country Potatoes, a classic potato casserole - it goes well with the silky, rich stroganoff sauce.
