Whisk the whipping cream until very soft peaks form, it takes about 3-4 minutes of whipping. Set aside. In a mixing bowl, blend the softened cream cheese, peanut butter, sugar and butter until smooth. Gently stir whipped cream into the peanut butter mixture.
Place 12 graham cracker mini-pies on a large baking sheet.
1. Assembly Directions If Using Jam:
Add a teaspoon of jam on each pie crust. Spoon about three tablespoons of peanut butter mixture on top of the jam, then dollop another teaspoon of jam on top.
Use a sharp knife to gently swirl the jam and peanut butter mixture. Top with a few peanuts for garnish.
2. Assembly Directions If Using Reese's Minis:
Slice the Reese's minis into two or three small pieces. Add a few portions of sliced Reese's minis on each pie crust. Spoon about three tablespoons of peanut butter mixture on top of the candy, then top with a few additional sections of the sliced candy.
Top with about a teaspoon of hot fudge topping as an optional garnish and place a whole Reese's mini on top.
Chill
Place the baking sheet with the mini pies in the refrigerator, uncovered. Chill until firm, about an hour.
9" Pie Crust Option
One 9” baked pie crust or a 9” graham cracker crust can be substituted for the mini pie crusts. Use half the jam or Reese's minis as a bottom layer, fill the pie crust with the peanut butter mixture, then dollop the remaining jam, or Reese's minis across the top. If using jam, swirl the ingredients together using the tip of a sharp knife.
Notes
Note: Nutritional facts were calculated using raspberry jam. If you are using a different type of jam or the Reese's minis please review the nutritional facts listed on the packaging. If using Cool Whip in place of whipped cream, gently combine the softened cream cheese, peanut butter and butter with the non-dairy whipped topping.
