Cougar Gold Cheese Quiche is a recipe for using the award-winning sharp cheddar cheese made on the campus of Washington State University. You could use any type of sharp cheddar in this recipe, but Cougar Gold is special and incredibly delicious. Serve with Homemade Orange Sweet Rolls for a great flavor combination.
19” pie crusteither frozen such as Marie Callendar’s or make one from scratch
1cupbaconcooked and diced - 6 - 7 strips
⅓cupdiced green onions
2cupsshredded Cougar Gold Cheesesharp cheddar, or any variety of sharp cheddar cheese
6eggs
1cuphalf and half
½teaspoonsalt
½teaspoonpepper
Instructions
Preheat oven to 400° F
Prepare a single pie crust and line a 9” pie plate with the crust or if using a frozen pie crust - defrost it for 10 minutes.
With either the frozen or fresh pie crust, use a fork to poke holes across the bottom and sides of the crust. Bake for 8 minutes, then set aside on a cooling rack.
Cook the bacon - about 6-7 strips - drain and dice the strips into ½" slices.
Dice the green onions and shred the Cougar Gold cheese, or any variety of sharp cheddar cheese. Set these ingredients aside until you are ready to assemble the quiche.
In a large glass measuring cup or small bowl, whisk together the eggs, half and half, salt and pepper.
Reduce oven temperature to 350° F.
Place 1 cup of shredded Cougar Gold Sharp Cheddar cheese - or your cheese of choice - and half the green onions and bacon in the crust.
Pour the egg and half and half mixture over the cheese, bacon and onions. Top with remaining 1 cup of shredded cheese, bacon and remaining green onions.
Bake for 35-45 minutes or until the center is set.
Cool for a few minutes before serving.
Notes
Any variety of cheddar cheese is delicious in quiche. Sometimes I've blended different types of cheese with the cheddar including Swiss cheese, Blue cheese and even Gruyere (a classic choice for quiche) and the result is always wonderful.
