This recipe for Philly Cheesesteak Bites takes all the flavors and textures of that iconic sandwich and puts them in the center of a bite-sized puff pastry.

Instructions
Defrost Pastry Dough and Prep Filling
Remove one puff pastry from the box (save the other one for the next time you make this) and defrost the pastry, it takes about 40 minutes. While the pastry sheet defrosts, slice and dice the green peppers, onions and provolone or American cheese. Keep the cheese at room temperature while you continute the prep work.
Place olive oil in a skillet on the stove and heat over medium high until the oil starts to shimmer. Place the diced green peppers and onions in the skillet and stir until the veggies start to soften. Remove the veggies from the skillet and set aside.
Slice the roast beef into thin strips.
Place the roast beef slices into the same skillet. Sprinkle worchestire sauce, toss and cook for another minute or until the beef is hot and starts to brown slightly.
Once the puff pastry is defrosted, preheat oven to 400°F.
Assemble and Bake
Using kitchen scissors, cut the puff pastry into two-inch squares and press each square into one mini muffin cup. Set aside.
Place several strips of beef into the bottom of each muffin cup, lined with puff pastry. I don't measure it, but about 1 tablespoon of beef is about the right amount. Top the beef with about two teaspoons of the green pepper and onions.
Bake for 8-10 minutes or until the pastry dough is lightly browned and the mini-cheesesteaks are starting to sizzle. Remove from the oven and quickly place cheese slices on top of each mini-cheesesteak. Return pan to the oven and bake 5-6 additional minutes or until the pastry dough is flaky and the cheese is melted. Serve warm with optional sauces or condiments.

The nutritional information was calculated using provolone cheese and does not account for any added sauces such as horseradish or ketchup. Philly Cheesesteak Bites are best baked in a mini-muffin pan, which has 24 muffin cups, as opposed to the standard-sized muffin pan. The key is to make these bite-sized and a mini-muffin pan is perfect for that.
