ZUCCHINI & CARROT STUFFING

1. zucchini 2. carrots 3. onion 4. cream of chicken soup 5. sour cream 6. pre-seasoned stuffing 7. butter

ONLY SEVEN INGREDIENTS

Dice the zucchini, you'll need about 4 cups.  Then cook in the microwave for a few minutes with a little water to partially cook the zucchini.

Use your favorite pre-seasoned stuffing mix. Any brand works great! I like "Herb Seasoned Classic Stuffing" by Pepperidge Farms.

Combine all the ingredients and place in a glass 13" x 9" baking dish. Even at this stage, it smells DELICIOUS!

As an optional decorative touch, take any leftover zucchini and make "zoodles." A spiralizer tool makes that process a breeze.

This stuffing recipe cooks for 40 minutes in a 375° F oven.
