3 cups diced butternut squash  2 cups milk ¼ cup butter ¼ cup flour ½ pound small shaped pasta  1 ¼ cup cheddar cheese  ¾ cup smoked gouda cheese  ½ cup parmesan cheese  ½ tsp nutmeg  ¼ tsp tabasco sauce 1 tsp salt ⅛ tsp pepper

Cook and drain the pasta. Then use the same pan, melt the butter and whisk in flour. Stir over medium heat until the butter is foamy, and whisk for about 20 seconds next, add the milk, cheeses and spices.

Combine the pasta in the pan with the cheese sauce, then place in a 2 quart baking dish.
