Pinto Bean Chili uses simple ingredients that you are likely to have on hand. This is a great recipe to use leftover meat.

PINTO BEAN CHILI, page 1 – 4-5 cups dried pinto beans  – 1 onion  – 2 cups pork loin, cooked – 2 tblsp + 1 tsp. chili powder – 1 tblsp + 1 tsp. cumin

PINTO BEAN CHILI, page 2 – 1 tsp oregano – 1 tblsp salt – ½ cup green chilis  – 2 cloves garlic – 7 cups water

Start by soaking dried pinto beans  overnight. The water does all the work and softens the beans while we sleep.

Drain the pinto beans then add the spices, onion, green chiles and diced meat. This recipe is a great way to use leftover pork loin or pot roast!

Switch the slow cooker to low, cover and cook Pinto Bean Chili all day. The slow cooked, spicy sauce is absolutely delicious!

Serve Pinto Bean Chili with sour cream, cilantro cheese or diced onion as optional toppings.
