Old Fashioned Potato Salad starts with POTATOES of course. I like to use red potatoes and here's a time saving tip: leave the peels on.

Dice the red potatoes into bite-sized chunks and boil in a pot of water with two teaspoons of salt until the potatoes are just barely fork tender.

The peels become very tender during the cooking process. Drain the potatoes, return them to the pot and place the pot over a bed of ice cubes to cool the potatoes quickly.

Prepare 5-6 hard boiled eggs, dice and add the eggs to the cooled potatoes in a large bowl.

You'll also add red onion and dill pickles but what makes this potato salad recipe unique is you also add several stalks of diced celery.
