You'll need about four pounds of fresh cauliflower. Dice it into 2-3 inch sections and spread the cauliflower evenly on a baking sheet lined with parchment paper.

Brush olive oil on each portion of cauliflower and place in a 400° F oven.

Bake for about 40 minutes or until the cauliflower is softened, roasted and showing some browning at the edges.

Place the oven-roasted cauliflower in the bowl of a food processor and blend until creamy.

Here are the ingredients you'll add next: – 2 cloves garlic crushed – 4 tablespoons tahini – 2 tablespoons lemon juice  – ½ teaspoon salt and pepper to taste, I use ½ teaspoon of each – 3 tablespoons Everything Bagel Seasoning – 1 teaspoon water
