Fresh Basil and Mint Pesto

It's easy to make pesto at home. If your herb garden is producing fresh basil and a little mint, you're ready to prepare pesto from scratch.

Ingredients – 2 cups fresh basil – 1 cup spinach – 1 tbsp fresh mint  – ⅓ cup pine nuts – ⅓ cup parmesan – 1 tbsp garlic – ½ tsp salt – ¼ tsp pepper – ¼ cup olive oil

Pesto is one of the easiest things you can make from scratch and the results are always delicious.  Oh and did I mention how amazing this SMELLS as you are preparing it!?

Simply stack the fresh basil, spinach, mint, garlic and the rest of the ingredients into the bowl of a food processor.

A food processor helps but is not 100% required. I DO think it's the best way to create that perfect pesto texture though.

Keep pulsing and checking the consistency.You'll want to see the texture from the pine nuts. This shows a pesto that still needs a few more pulses from the food processor.

This fresh pesto uses pine nuts and those tiny nuts are "spendy" - but check out the recipe for a good substitution.
