Here's the secret: FINELY crushed saltine crackers!

Use one sleeve of saltines for this recipe. simply place the crackers in a gallon-sized zipped top bag and use a rolling pin to crush the crackers until very fine.

The breading is a combo of your favorite store-bought SEAFOOD breading mix and the saltines. you'll also dip the cod in egg so the breading has something to stick to.

ingredients: 3 pounds cod  1 ⅓ cups seafood breading mix  1 sleeve of saltine crackers about 38-40 crackers crushed fine 2 eggs whisked 1 cup vegetable oil for frying

Fry the cod in hot oil in a skillet on the stove for 3-5 minutes, turning once.
