MUFFIN INGREDIENTS ½ cup butter  ⅔ cup sugar ¾ cup Greek yogurt 2 eggs 2 cups flour 2 ¼ tsp baking powder ¼ tsp baking soda ¼ tsp salt 1 C. rhubarb  1 C. blueberries

THE MUFFIN DOUGH WILL BE STURDY AND THAT'S PERFECTLY OK. IT HELPS HOLD THE BERRIES AND RHUBARB YET TO COME.

BAKING WITH RHUBARB IS SO EASY. ALL YOU NEED TO DO IS RINSE THE RHUBARB STALKS, SLICE - THEN DICE INTO SMALL CHUNKS.

THE MUFFIN TOPS ON BLUEBERRY RHUBARB MUFFINS ARE DELICIOUS. THEY START WITH A COMBO OF BROWN SUGAR, BUTTER AND FLOUR.

PLACE THE MUFFIN BATTER IN MUFFIN CUPS, THEN ADD THE SWEET TOPPING AND A FEW EXTRA BERRIES AND DICED RHUBARB ON TOP.

BAKE FOR ABOUT 15 MINUTES AT 400°F - THE HOT OVEN HELPS CREATE THAT DISTINCTIVE ROUNDED MUFFIN TOP! USE A FORK TO GENTLY REMOVE EACH MUFFIN FROM THE PAN.
