Ingredients FOR TOMATO-CREAM SAUCE 1 shallot  4 cloves garlic  2 tablespoons olive oil 3, 14.5 oz cans fire roasted, diced tomatoes 2 teaspoons salt pepper, to taste ⅓ cup freshly grated parmesan cheese ¼ cup half and half

Heat olive oil in a large saucepan on the stove, add shallot and garlic and cook until softened and fragrant.

STEP #1.

You can substitute shallots for yellow onions in a pinch, but shallots have a more mild flavor.

Add 3 cans fire roasted diced tomatoes and the salt and pepper, then blend using an immersion blender.

STEP #2.

Simmer for a few minutes, then remove from the heat and add the cheese and the half and half.
